Cheesy Tomato Cauliflower Bake

Cauliflower is still cool right? Kale had its moment and now cauliflower is taking the spotlight as the new "it" healthy food. There's cauliflower rice, cauliflower pizza crust, and even buffalo wing cauliflower. The beauty of this previously misunderstood veggie is that it can be translated into just about anything!

This cheesy cauliflower is so good you won't even miss the pasta. I kept mine vegetarian but you could also add sausage or pepperoni to make it heartier.

Ooey gooey cheesy tomato cauliflower bake! Healthy recipe using cauliflower that you won't even miss the pasta. So delicious!


Cheesy Tomato Cauliflower Bake

1 head cauliflower--chopped into florets
1 cup marinara sauce
1/3 cup heavy cream
1 cup shredded mozzarella
1/3 cup parmesan cheese
1 cup cherry tomatoes
1/2 teaspoon red pepper flakes

Roast cauliflower florets (tossed in 1 tb olive oil) on a baking sheet for 30 minutes at 425; tossing half way through. In a saucepan heat up the marinara sauce then add in the half the mozzarella and parmesan and the heavy cream (stir until melded together). Take off the heat and add in the roasted cauliflower tossing until combined. Transfer into a greased baking dish and top with the cherry tomatoes and remaining cheese. Bake at 350 for 25 minutes then broil for 2 minutes to get everything bubbly.

  13. Wow, this looks amazing! I didn't know cauliflower was so "in". I'm glad because I hate kale, and cauliflower tastes like potatoes :) (Not that you shouldn't eat kale now that it's not trendy, ha ha.) I haven't been to your blog in a while, it looks fabulous!
